Is there a software out there that can switch between single elimination and double elimination out there

What do you mean by "switch between"? There is some software out there that will run single elim and double elim, but to go from one to the other that I would have no idea.

Anyways, why deal with all of the drawbacks of double elim, much less single elim?

Go with accumulative time software. Its the way to go. That way all the racers race once on each track. It eliminates the issues of which lane was faster.
